When you think of Southern dining, it’s possible you might be thinking of barbecue, the “meat-and-three,” or the three Cs (cornbread, collards, and catfish). Nothing in the world wrong with any of those things mind you; but in the New South, the simple sensibilities of local, lovingly prepared fare have been amplified, allowing all the comfort of Southern culinaria to morph into a meal that is, for lack of a better word, world-class.
